If your weekends are anything like mine, they’re full of football. I love college (Go Dawgs!), the hubs prefers pro (Go Skins! Go Falcons!), so on Saturdays
and
Sundays, our house is usually packed with football fans and lots of food.
This year, I kicked off our weekly potluck with a very Southern recipe: Pimento cheese sandwiches (hey, if they’re good enough to serve at the Masters, they’re good enough to serve during a football game). This recipe -- courtesy of

-- was a hit at the first Sunday game of the NFL season.

Pimento Cheese Sandwiches from Dennis Dean Catering:

Pimento Cheese Sandwiches from Dennis Dean Catering:

1 lb cream cheese
-
1 c cheddar cheese
-
1 c mayonnaise
-
4 oz pimentos
-
Tabasco sauce (to taste)
-
Salt and pepper (to taste)

Country white bread
-
Roasted red peppers
-
Micro sprouts
-Combine cream cheese, mayonnaise, cheddar cheese, pimentos, Tabasco and salt and pepper in a mixing bowl and stir until completely incorporated.
-Spread pimento cheese onto slices of bread, top with roasted red peppers and micro sprouts, and cover with another slice of bread. Cut off crusts and serve.
